Ingredients:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red or green), chopped
  • 2 (15 oz) cans kidney beans, drained and rinsed
  • 2 (15 oz) cans black beans, drained and rinsed
  • 1 (28 oz) can crushed tomatoes
  • 1 (6 oz) can tomato paste
  • 2 cups beef or chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions:

  1. Brown the Meat: In a large skillet over medium heat, heat the olive oil. Add the ground beef and ground pork, cooking until browned and crumbly, about 5-7 minutes. Drain any excess fat.
  2. Sauté Vegetables: Add the chopped onion, garlic, and bell pepper to the skillet with the meat. Sauté until the vegetables are softened, about 3-4 minutes.
  3. Combine Ingredients: Transfer the cooked meat and vegetables to the slow cooker. Add the kidney beans, black beans, crushed tomatoes, tomato paste, and beef broth. Stir in the chili powder, cumin, smoked paprika, oregano, thyme, salt, and pepper.
  4. Cook: Cover and cook on low for 6-8 hours, or on high for 4 hours, until the chili is thickened and the flavors are well combined.
  5. Serve: Taste and adjust seasoning if needed. Ladle the chili into bowls and garnish with your choice of toppings such as shredded cheese, sour cream, chopped green onions, or cilantro. Serve with cornbread or tortilla chips for a complete meal.

This Slow-Cooker Chili is not only easy to make but also delivers a hearty, flavorful dish that’s perfect for any occasion, whether it’s a family dinner or a casual gathering.
