Ingredients:

  • 4 pounds beef short ribs, bone-in
  • 1/2 cup soy sauce
  • 1/2 cup beef broth
  • 1/4 cup hoisin sauce
  • 1/4 cup brown sugar
  • 3 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon freshly grated ginger
  • 4 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes (optional for heat)
  • 1/4 cup green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions:

  1. Prepare the Ribs: Season the short ribs with salt and pepper. In a large skillet, heat a bit of oil over medium-high heat. Sear the short ribs on all sides until they are browned, about 2-3 minutes per side. Transfer the ribs to your slow cooker.
  2. Make the Sauce: In a medium bowl, whisk together the soy sauce, beef broth, hoisin sauce, brown sugar, rice vinegar, sesame oil, ginger, garlic, and crushed red pepper flakes.
  3. Cook the Ribs: Pour the sauce over the short ribs in the slow cooker. Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the ribs are tender and the meat is falling off the bone.
  4. Serve: Once the ribs are done, carefully remove them from the slow cooker. Skim any excess fat from the sauce in the slow cooker. If you prefer a thicker sauce, you can transfer it to a saucepan and simmer it on the stove until it reduces to your desired consistency.
  5. Garnish and Enjoy: Serve the short ribs with the sauce, garnished with sliced green onions and sesame seeds. Enjoy with steamed rice or your favorite vegetables.
