Ingredients:
- 4 boneless, skinless chicken breasts
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes with green chilies
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper (optional for extra heat)
- 1 lime, juiced
- Fresh cilantro, chopped (for garnish)
Instructions:
- Prepare the Slow Cooker: Lightly grease the inside of your slow cooker with cooking spray.
- Layer Ingredients: Place the chicken breasts at the bottom of the slow cooker. Add the black beans, corn, diced tomatoes (with their juices), onion, and garlic on top of the chicken.
- Season the Dish: In a small bowl, mix together the chili powder, cumin, smoked paprika, ground coriander, salt, black pepper, and cayenne pepper (if using). Sprinkle the spice mixture evenly over the ingredients in the slow cooker.
- Add Broth: Pour the chicken broth over the seasoned ingredients.
- Cook: Cover the slow cooker with the lid and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
- Shred the Chicken: Once cooked, remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker and stir to combine with the rest of the ingredients.
- Finish the Dish: Stir in the lime juice, taste, and adjust seasoning if necessary.
- Serve: Serve the Slow-Cooked Southwest Chicken over rice, in tortillas, or with your favorite side. Garnish with freshly chopped cilantro.
