Ingredients:

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

For the Bowl:

  • 1 cucumber, thinly sliced
  • 1 carrot, julienned
  • 1 avocado, sliced
  • 1/4 cup pickled ginger
  • 2 tablespoons sesame seeds
  • 1 sheet nori, cut into thin strips
  • 2 green onions, sliced
  • Soy sauce, for drizzling
  • Sriracha mayo (optional)

Instructions:

  1. Cook the Sushi Rice:
    • Rinse the sushi rice under cold water until the water runs clear.
    • In a medium saucepan, combine the rinsed rice and water. Bring to a boil over high heat.
    • Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
    • In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Gently fold the mixture into the cooked rice. Let the rice cool slightly.
  2. Prepare the Shrimp:
    • In a bowl, combine the soy sauce, sesame oil, grated ginger, and minced garlic.
    • Add the shrimp and toss to coat evenly. Let marinate for 10 minutes.
    • Heat a skillet over medium-high heat. Cook the shrimp for 2-3 minutes on each side, or until pink and cooked through. Remove from heat.
  3. Assemble the Bowls:
    • Divide the sushi rice among four bowls.
    • Arrange the cooked shrimp, cucumber slices, julienned carrot, avocado slices, pickled ginger, and nori strips over the rice.
    • Sprinkle with sesame seeds and sliced green onions.
  4. Serve:
    • Drizzle with soy sauce and sriracha mayo if desired.
