Shrimp-Stuffed Poblano Peppers

Shrimp-Stuffed Poblano Peppers are a delightful twist on the classic stuffed pepper dish, combining the smoky heat of poblano peppers with succulent shrimp, rice, and a flavorful blend of spices. Ingredients:

  • 4 large poblano peppers
  • 1 lb shrimp, peeled and deveined, chopped
  • 1 cup cooked rice
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup cream cheese, softened
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Preheat your oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast for about 10-15 minutes, turning occasionally, until the skins are blistered and charred. Remove from the oven and let them cool slightly. Peel off the skins, cut a slit down the side of each pepper, and remove the seeds.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes.
  3. Stir in the chopped shrimp, cumin, chili powder, salt, and pepper. Cook until the shrimp are pink and cooked through, about 3-4 minutes. Remove from heat.
  4. In a mixing bowl, combine the cooked rice, shrimp mixture, shredded Monterey Jack cheese, and cream cheese until well mixed.
  5. Stuff each poblano pepper with the shrimp and rice mixture, being careful not to overfill.
  6. Place the stuffed peppers back on the baking sheet and bake for an additional 10 minutes until the cheese is melted and bubbly.
  7. Remove from the oven and garnish with fresh cilantro. Serve with lime wedges on the side.
