SCOTTISH SHORTBREAD COOKIES

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. Cream the Butter and Sugars:
    • In a large mixing bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy, about 3-4 minutes. If using, add the vanilla extract and mix until combined.
  3. Add the Flour and Salt:
    • Gradually sift in the flour and salt, mixing until the dough just comes together. Be careful not to overmix, as this can make the cookies tough.
  4. Shape the Dough:
    • Turn the dough out onto a lightly floured surface. Gently knead it a few times to bring it together. Roll the dough to about 1/4 inch thickness and use a cookie cutter to cut out your desired shapes. Alternatively, you can press the dough into a 9×9-inch baking pan for a traditional rectangular shape and score the dough into rectangles or wedges.
  5. Bake the Cookies:
    • Place the cookies on the prepared baking sheet, spacing them about 1 inch apart. If using a baking pan, prick the surface of the dough with a fork to allow steam to escape and prevent puffing. Bake in the preheated oven for 20-25 minutes, or until the edges are lightly golden. The cookies should remain pale in color.
  6. Cool and Serve:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. If you baked the dough in a pan, carefully cut the shortbread into pieces while it is still warm, then allow it to cool completely.
