Sausage Quesadillas

Sausage Quesadillas are a delightful twist on the classic quesadilla, bringing together the savory flavors of spiced sausage, melted cheese, and crispy tortillas. This dish is perfect for a quick and satisfying meal or as a crowd-pleasing appetizer. The richness of the sausage pairs wonderfully with the gooey cheese, while the tortillas provide a satisfying crunch. Ingredients:

  • 1 lb (450g) sausage (chorizo, Italian, or breakfast sausage)
  • 8 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 small onion, finely chopped
  • 1 bell pepper, finely chopped
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)
  • Salsa, sour cream, or guacamole for serving

Instructions:

  1. Cook the Sausage: In a large skillet, heat the olive oil over medium heat. Add the sausage, breaking it up with a spoon as it cooks. Cook until browned and fully cooked through, about 8-10 minutes. Remove the sausage from the skillet and set aside, leaving a bit of the grease in the pan.
  2. Sauté the Vegetables: In the same skillet, add the chopped onion, bell pepper, and garlic. Sauté until the vegetables are soft and the onion is translucent, about 5 minutes. Season with cumin, smoked paprika, salt, and pepper. Return the cooked sausage to the skillet and mix everything together. Remove from heat.
  3. Assemble the Quesadillas: Lay out four tortillas on a flat surface. Evenly distribute the sausage mixture over each tortilla, then sprinkle a generous amount of shredded cheese on top. Place another tortilla on top of each to form a sandwich.
  4. Cook the Quesadillas: Wipe out the skillet and return it to medium heat. Place one quesadilla in the skillet and cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas.
  5. Serve: Slice the quesadillas into wedges and garnish with fresh cilantro if desired. Serve with salsa, sour cream, or guacamole on the side.
