Ingredients:

  • 8 small flour tortillas
  • 1 pound cooked salmon, flaked

  • 1/2 red onion, finely chopped
  • 1 jalapeño, finely chopped (optional, for heat)
  • 1 avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 2 tablespoons olive oil or butter, for cooking
  • Sour cream and salsa for serving (optional)

Instructions:

  1. Prepare the Ingredients:
    • Flake the cooked salmon into bite-sized pieces. If using a leftover cooked salmon filet, remove the skin and any bones.
  2. Assemble the Quesadillas:
    • Lay out four tortillas on a flat surface. Evenly distribute the shredded cheese on each tortilla, followed by the flaked salmon, chopped red onion, jalapeño (if using), avocado slices, and fresh cilantro. Squeeze a bit of lime juice over the filling. Top with the remaining tortillas.
  3. Cook the Quesadillas:
    • Heat a large skillet over medium heat and add a small amount of olive oil or butter. Place one of the assembled quesadillas in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas.
