Roasted Red Pepper Hummus

Roasted Red Pepper Hummus is a vibrant, flavorful twist on the classic hummus dip. Ingredients:

  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 large roasted red pepper (from a jar or homemade)
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Extra olive oil and paprika for garnish

Instructions:

  1. Prepare the ingredients: If using a homemade roasted red pepper, roast a red bell pepper over an open flame or in the oven until the skin is blackened, then peel off the skin and remove the seeds. If using jarred roasted peppers, drain and pat dry.
  2. Blend the hummus: In a food processor, combine the chickpeas, roasted red pepper, tahini, olive oil, lemon juice, garlic, cumin, and smoked paprika. Blend until smooth, stopping to scrape down the sides as needed.
