Roasted Beet Jam

Roasted Beet Jam is a unique and delightful spread that transforms the earthy sweetness of beets into a rich, vibrant jam. The roasting process intensifies the natural sugars in the beets, while the addition of citrus and a touch of spice creates a complex and balanced flavor profile. This jam is not only visually stunning with its deep, jewel-like color, but it also offers a versatile addition to your culinary repertoire. Perfect for spreading on toast, pairing with cheeses, or adding a gourmet touch to sandwiches, Roasted Beet Jam is a delicious way to enjoy the nutritious and often underappreciated beet.

Ingredients:

  • 4 medium beets, washed and trimmed
  • 1 cup granulated sugar
  • 1/2 cup orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon grated orange zest
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves (optional)
  • 1/4 teaspoon salt

Instructions:

  1. Roast the Beets:
    • Preheat your oven to 400°F (200°C). Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast in the preheated oven for 45-60 minutes, or until the beets are tender when pierced with a fork. Allow the beets to cool, then peel and finely chop them.
  2. Cook the Jam:
    • In a medium saucepan, combine the chopped beets, sugar, orange juice, lemon juice, orange zest, cinnamon, cloves (if using), and salt. Bring the mixture to a boil over medium heat, stirring frequently. Reduce the heat to low and simmer for about 30-40 minutes, or until the mixture thickens and reaches a jam-like consistency.
  3. Blend the Jam:
    • If you prefer a smoother texture, use an immersion blender to carefully blend the jam until it reaches your desired consistency. Alternatively, you can leave it chunky for a more rustic feel.
  4. Store and Serve:
    • Allow the jam to cool slightly before transferring it to sterilized jars. Seal the jars and refrigerate. The jam will keep in the refrigerator for up to 2 weeks.

Roasted Beet Jam is a wonderful and versatile spread that adds a burst of flavor and color to a variety of dishes. Its sweet, earthy taste and silky texture make it an unexpected yet delightful addition to your pantry.
