Ingredients

  • 6 cups water
  • 1 onion, halved

  • 1 teaspoon salt
  • 2 tablespoons lard or vegetable oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper, to taste

Instructions

  1. Cook the beans:
    • In a large pot, combine the soaked and drained beans, water, onion halves, garlic cloves, bay leaf, and salt. Bring to a boil over medium-high heat.
    • Reduce the heat to low and simmer the beans for 1.5 to 2 hours, or until they are tender. Remove the bay leaf and discard. Drain the beans, reserving about 1 cup of the cooking liquid.
  2. Mash the beans:

  3. Fry the beans:
    • Add the ground cumin and chili powder to the mashed beans. Stir to combine and cook for 5-7 minutes, adding the reserved cooking liquid as needed to achieve a smooth, creamy texture.
  4. Season and serve:
    • Season the refried beans with salt and pepper to taste. Transfer to a serving bowl and top with optional toppings, if desired.
