Raspberry Rhubarb Jam

  • 1 packet (1.75 oz) powdered fruit pectin

Instructions:

  1. In a large, heavy-bottomed pot, combine the raspberries, chopped rhubarb, and lemon juice. Bring the mixture to a boil over medium heat, stirring frequently.
  2. Once the fruit begins to break down and release its juices, add the lemon zest and gradually stir in the powdered pectin.
  3. Bring the mixture to a full rolling boil, then add the sugar all at once. Stir constantly until the sugar is completely dissolved.
  4. Continue to boil the jam for 5-7 minutes, stirring frequently to prevent sticking or burning, until the mixture thickens.
  5. To test the consistency, place a small spoonful of jam on a chilled plate. If it wrinkles when pushed with your finger, it’s ready. If not, continue boiling for another minute or two and test again.
  6. Once the jam has reached the desired consistency, remove it from the heat and skim off any foam that may have formed on the surface.
  7. Carefully ladle the hot jam into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims of the jars with a clean, damp cloth and seal with sterilized lids and bands.
  8. Process the jars in a boiling water bath for 10 minutes to ensure they are properly sealed.
  9. Remove the jars from the water bath and let them cool completely. Once cooled, check the seals and store the jam in a cool, dark place.
