Quinoa Black Bean Burgers

These Quinoa Black Bean Burgers are a nutritious and flavorful alternative to traditional meat patties, packed with protein from both quinoa and black beans. With a hint of smoky spices and a bit of crunch from breadcrumbs, these patties hold together well and are perfect for grilling or pan-frying. They make a satisfying vegetarian or vegan meal option and can be topped with your favorite burger fixings, like avocado, lettuce, tomato, or a tangy sauce.

Ingredients:

  • 1/2 cup quinoa, rinsed
  • 1 cup water
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1/2 cup breadcrumbs (use gluten-free if necessary)
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for cooking)
  • 1 tablespoon lime juice (optional)

Instructions:

  1. Cook the quinoa: In a medium saucepan, bring the quinoa and water to a boil. Reduce heat to low, cover, and simmer for about 15 minutes until the water is absorbed and the quinoa is tender. Remove from heat and let it cool.
  2. Mash the beans: In a large mixing bowl, mash the black beans with a fork, leaving some chunks for texture.
  3. Combine ingredients: Add the cooked quinoa, breadcrumbs, onion, bell pepper, garlic, cumin, smoked paprika, cayenne (if using), lime juice, salt, and pepper to the mashed beans. Stir until well combined.
  4. Form the patties: Divide the mixture into 4 equal portions and shape each into a patty.
  5. Cook the burgers: In a large skillet, heat olive oil over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crisp.
  6. Serve: Serve the patties on buns with your favorite toppings, such as avocado, lettuce, tomato, or your preferred sauce.

Enjoy these hearty, nutritious burgers as a delicious and wholesome meal!
