Ingredients:

For the Crust:

  • 2 cups crushed pretzels
  • 3/4 cup butter, melted
  • 3 tablespoons granulated sugar

For the Cream Cheese Layer:

  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 8 oz whipped topping (like Cool Whip)

For the Topping:

  • 1 large package (6 oz) strawberry or raspberry flavored gelatin (Jell-O)
  • 2 cups boiling water
  • 1 can (20 oz) crushed pineapple, drained
  • 1 pint fresh strawberries or raspberries, sliced

Instructions:

  1. Prepare the Crust:
    • Preheat your oven to 350°F (175°C).
    • In a medium mixing bowl, combine the crushed pretzels, melted butter, and 3 tablespoons of sugar. Mix well until the pretzels are evenly coated.
    • Press the pretzel mixture into the bottom of a 9×13 inch baking dish to form an even crust.
    • Bake the crust for 10 minutes, then remove from the oven and allow it to cool completely.
  2. Make the Cream Cheese Layer:
    • In a large mixing bowl, beat the softened cream cheese and 1 cup of sugar until smooth and creamy.
    • Fold in the whipped topping until well combined.
    • Spread the cream cheese mixture evenly over the cooled pretzel crust. Be sure to spread it all the way to the edges to create a seal (this helps prevent the gelatin from seeping into the crust). Refrigerate while you prepare the topping.
  3. Prepare the Topping:
    • In a medium bowl, dissolve the gelatin in 2 cups of boiling water. Stir until completely dissolved.
    • Add the drained crushed pineapple and fresh strawberries or raspberries to the gelatin mixture, and stir to combine.
    • Allow the mixture to cool slightly until it begins to thicken (about 15-20 minutes).
  4. Assemble the Dessert:
    • Pour the gelatin mixture over the cream cheese layer, spreading it evenly.
    • Refrigerate the dessert for at least 4 hours, or until the topping is fully set.
  5. Serve:
