Potato Bread

Potato bread is a soft and slightly sweet loaf that uses mashed potatoes to create an incredibly tender and moist texture. This bread is perfect for sandwiches, toast, or simply enjoying with butter. Potato Bread Recipe

Ingredients:

  • 1 medium potato, peeled and diced
  • 1/2 cup potato cooking water (reserved from boiling the potato)
  • 1 tablespoon sugar
  • 1/2 cup warm milk
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 4 cups all-purpose flour
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1 egg (optional, for brushing)

Instructions:

  1. Cook the potato: Boil the diced potato in water until soft, about 10-12 minutes. Drain, but reserve 1/2 cup of the cooking water. Mash the potato until smooth and let it cool slightly.
  2. Activate the yeast: In a small bowl, mix the warm milk, reserved potato water, and sugar. Sprinkle the yeast on top and let it sit for 5-10 minutes until foamy.
  3. Mix the dough: In a large mixing bowl, combine the mashed potato, yeast mixture, melted butter, and salt. Gradually add the flour, mixing until a soft dough forms. Turn the dough onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. First rise: Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1-1.5 hours, or until doubled in size.
  5. Shape and second rise: Punch down the dough and shape it into a loaf. Place it in a greased 9×5-inch loaf pan. Cover and let it rise for another 30-40 minutes.
  6. Bake: Preheat the oven to 375°F (190°C). If desired, brush the top of the loaf with a beaten egg for a golden crust. Bake for 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped.
  7. Cool and serve: Remove the bread from the pan and let it cool on a wire rack before slicing.
