  • 1 can (14 oz) coconut milk or 1 cup plain yogurt
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup water or chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish
  • Cooked rice or naan for serving

Instructions

  1. Brown the pork: Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the pork chunks and brown them on all sides, about 5-7 minutes. Remove the pork from the pot and set aside.
  2. Sauté the aromatics: In the same pot, add the chopped onion and sauté until softened, about 4-5 minutes. Add the garlic and ginger, and cook for another minute until fragrant.
  3. Add the spices: Stir in the curry powder, cumin, coriander, turmeric, and chili powder (if using). Cook for 1-2 minutes to toast the spices and enhance their flavors.
  4. Simmer the curry: Add the diced tomatoes and coconut milk (or yogurt) to the pot, stirring to combine. Return the browned pork to the pot, and pour in the water or broth. Bring the curry to a simmer, then reduce the heat to low. Cover and let it cook for 45-60 minutes, or until the pork is tender and the sauce has thickened.
