Pork and Bamboo Shoots

This dish is a delightful combination of tender pork and crisp bamboo shoots, creating a perfect harmony of textures and flavors. Ingredients:

  • 1 lb pork loin or pork shoulder, thinly sliced
  • 1 can (8 oz) bamboo shoots, drained and sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons cornstarch
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 tablespoons vegetable oil
  • 1/4 cup green onions, chopped
  • 1 tablespoon sesame seeds (optional)

Instructions:

  1. Marinate the Pork: In a bowl, combine the soy sauce, oyster sauce, rice vinegar, sesame oil, cornstarch, sugar, garlic, and ginger. Add the pork slices to the marinade, toss to coat, and let it sit for at least 15 minutes.
  2. Prepare the Bamboo Shoots: While the pork is marinating, drain and slice the bamboo shoots if they aren’t pre-sliced. Set them aside.
  3. Cook the Pork: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork, spreading it out in a single layer. Cook for 2-3 minutes on each side until the pork is browned and cooked through. Remove the pork from the skillet and set it aside.
  4. Stir-Fry the Bamboo Shoots: In the same skillet, add a bit more oil if necessary. Add the bamboo shoots and stir-fry for 2-3 minutes until they are heated through and slightly golden.
  5. Combine and Serve: Return the cooked pork to the skillet, tossing it with the bamboo shoots until everything is well mixed and heated through. Stir in the green onions and sesame seeds, if using.
  6. Serve: Serve the pork and bamboo shoots over steamed rice or noodles, and enjoy!

This dish is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to two days.
