Piroshki

Piroshki are delightful Russian hand pies, typically stuffed with a variety of fillings like meats, vegetables, or cheeses. These soft, golden pastries can be baked or fried and are a comforting street food enjoyed across Eastern Europe. Piroshki Recipe

Ingredients:

For the Dough:

  • 3 ½ cups all-purpose flour
  • 1 package (2 ¼ tsp) active dry yeast
  • 1 cup warm milk
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 large egg
  • 3 tablespoons butter, melted

For the Filling:

  • 1 lb ground beef or pork (or a combination)
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon vegetable oil
  • 1 hard-boiled egg, chopped (optional)
  • Salt and pepper, to taste
  • 1 tablespoon fresh dill, chopped (optional)

Instructions:

  1. Prepare the dough: In a small bowl, dissolve yeast and sugar in warm milk. Let it sit for 5-10 minutes until frothy. In a large mixing bowl, combine flour and salt. Add the yeast mixture, egg, and melted butter. Stir until a dough forms, then knead on a lightly floured surface for 5-7 minutes, until smooth. Place the dough in a greased bowl, cover, and let it rise for about 1 hour, or until doubled in size.
  2. Prepare the filling: While the dough is rising, heat oil in a skillet over medium heat. Add onions and garlic, and sauté until soft and translucent, about 3-4 minutes. Add the ground meat and cook until browned, breaking it apart as it cooks. Season with salt, pepper, and fresh dill. Stir in the chopped hard-boiled egg if using. Remove from heat and let the filling cool.
  3. Assemble the piroshki: Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a ball and then flatten it into a small circle. Place 1-2 tablespoons of filling in the center of each circle. Fold the dough over the filling and pinch the edges to seal.
  4. Cook the piroshki:
    • Baking method: Preheat your oven to 375°F (190°C). Place the piroshki on a greased or parchment-lined baking sheet. Brush with egg wash (1 beaten egg) for a golden finish. Bake for 20-25 minutes or until golden brown.
    • Frying method: Heat oil in a large skillet over medium heat. Fry the piroshki in batches until golden and crispy on both sides, about 3-4 minutes per side. Drain on paper towels.
  5. Serve: Let the piroshki cool slightly before serving. Enjoy with sour cream, mustard, or pickled vegetables for a traditional touch.
