Pina Colada Tube Cake is a luscious dessert that captures the tropical essence of the classic cocktail in cake form. Bursting with sweet pineapple, creamy coconut, and a hint of rum, this moist and flavorful cake is perfect for summertime celebrations or when you’re dreaming of an island getaway. Baked in a tube pan, this cake is not only delicious but visually impressive as well. A drizzle of coconut glaze and a sprinkle of shredded coconut on top adds the perfect finishing touch, making each slice a tropical indulgence.

Ingredients:

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup crushed pineapple, drained
  • 1/2 cup coconut milk
  • 1/4 cup rum (optional)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sweetened shredded coconut

For the Glaze (optional):

  • 1 cup powdered sugar
  • 2-3 tablespoons coconut milk
  • 1/2 teaspoon rum extract or vanilla extract
  • Shredded coconut for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 10-inch tube pan.
  2. Cream the Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add the eggs one at a time, beating well after each addition.
  3. Mix Wet Ingredients: In a separate bowl, combine the crushed pineapple, coconut milk, rum (if using), and vanilla extract.
  4. Mix Dry Ingredients: In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the pineapple mixture, beginning and ending with the dry ingredients. Stir in the shredded coconut until just combined.
  5. Bake the Cake: Pour the batter into the prepared tube pan and smooth the top. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then remove and transfer to a wire rack to cool completely.
  6. Prepare the Glaze (Optional): In a small bowl, whisk together the powdered sugar and coconut milk until smooth. Add rum extract or vanilla extract. Drizzle the glaze over the cooled cake and garnish with shredded coconut.

This Pina Colada Tube Cake brings a taste of the tropics to your table, perfect for any occasion when you want to enjoy the flavors of paradise!
