Ingredients:

For the Base:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon salt

For the Filling:

  • 1/2 cup brown sugar, packed
  • 1/2 cup light corn syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 cup chopped nuts (such as walnuts or pecans)
  • 1/2 cup chocolate chips

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easier removal.
  2. Make the Base:
    • In a medium mixing bowl, combine the flour, granulated sugar, softened butter, and salt. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking pan.
  3. Bake the Base:
    • Bake the base in the preheated oven for about 10-12 minutes, or until it is lightly golden. Remove from the oven and set aside.
  4. Prepare the Filling:
    • In a large bowl, whisk together the brown sugar, corn syrup, eggs, and vanilla extract until smooth. Stir in the rolled oats, chopped nuts, and chocolate chips until well combined.
  5. Add the Filling and Bake:
    • Pour the filling over the pre-baked base, spreading it out evenly. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and golden brown.
  6. Cool and Slice:
    • Allow the bars to cool completely in the pan on a wire rack. Once cooled, cut into squares or bars.

Picnic Bars are a delicious combination of textures and flavors, with their crumbly base and chewy, rich filling. Perfect for sharing, these easy-to-make treats are great for any casual gathering or as a sweet snack to enjoy anytime.
