Their bright acidity and earthy mushroom flavor make them a fantastic accompaniment to grilled meats, sandwiches, or as part of a charcuterie board. Ingredients:
- 1 pound button mushrooms, cleaned and trimmed
- 1 1/2 cups white vinegar
- 1/2 cup water
- 1/4 cup olive oil
- 3 cloves garlic, sliced
- 2 teaspoons salt
- 1 teaspoon sugar
- 1 teaspoon whole black peppercorns
- 1 teaspoon mustard seeds
- 1/2 teaspoon dried thyme
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- 2 bay leaves
- Fresh parsley or dill for garnish (optional)
Instructions:
- Prepare the Mushrooms:
- In a large saucepan, bring the vinegar, water, olive oil, garlic, salt, sugar, black peppercorns, mustard seeds, thyme, red pepper flakes (if using), and bay leaves to a boil.
- Cook the Mushrooms:
- Add the mushrooms to the boiling brine. Reduce the heat and let them simmer for 10 minutes, stirring occasionally, until the mushrooms are tender and have absorbed the flavors of the brine.
- Cool and Pickle:
- Remove the saucepan from heat and allow the mushrooms to cool in the brine. Once cooled, transfer the mushrooms and brine to a clean jar or container, making sure the mushrooms are fully submerged in the liquid. Seal tightly and refrigerate.
- Serve:
- Let the mushrooms pickle in the refrigerator for at least 24 hours before serving to allow the flavors to develop. Garnish with fresh parsley or dill if desired, and serve cold.
