Ingredients

  • 4 large bell peppers (any color), halved and seeds removed
  • 1 lb thinly sliced steak (ribeye or sirloin)
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 8 slices provolone cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper or lightly grease it.
  2. Prepare the peppers: Slice the bell peppers in half and remove the seeds and membranes. Place the pepper halves in the prepared baking dish, cut side up.
  3. Cook the filling: In a large skillet, heat olive oil over medium heat. Add the onions and mushrooms, sautéing for 5-7 minutes until softened. Add the garlic and cook for another minute. Push the vegetables to one side of the pan and add the thinly sliced steak. Cook the steak for 3-4 minutes, until browned. Stir in the Worcestershire sauce and season with salt and pepper to taste. Combine the steak and vegetables in the skillet.
  4. Stuff the peppers: Place a slice of provolone cheese at the bottom of each pepper half. Spoon the steak and vegetable mixture evenly into each pepper, then top each with another slice of provolone cheese.
  5. Bake: Cover the baking dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  6. Serve: Garnish with fresh parsley if desired, and serve hot.
