Instructions

  1. Prepare the crust:
    • Preheat the oven to 375°F (190°C).
    • Roll out the pie crust and fit it into a 9-inch pie dish. Trim the edges as needed.
    • Line the crust with parchment paper and fill it with pie weights or dried beans. Bake for 10 minutes, remove the weights and parchment, and bake for an additional 5 minutes. Set aside to cool.
  2. Prepare the filling:
    • Heat olive oil in a skillet over medium heat. Add the chopped spinach and sauté until wilted, about 2 minutes. Remove from heat.
    • In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, onion powder, and red pepper flakes.
  3. Assemble the quiche:
    • Spread the sautéed spinach evenly over the bottom of the pre-baked crust.
    • Sprinkle the shredded mozzarella and cheddar cheese over the spinach.
    • Arrange the sliced pepperoni on top of the cheese.
