  • 4 cups chicken or beef broth
  • 1 scotch bonnet or habanero pepper, optional, for heat
  • Salt and black pepper, to taste
  • Fresh cilantro or parsley, for garnish

Instructions

  1. Sauté the aromatics:
    • Heat the vegetable oil in a large pot over medium heat. Add the chopped onion, garlic, and ginger, and sauté for about 3 minutes until fragrant and the onion is translucent.
  2. Cook the protein:
    • Add the chicken, beef, or fish pieces to the pot. Cook until browned on all sides, about 5 minutes. If using fish, cook for 3 minutes to avoid overcooking.
  3. Add the bell peppers:
    • Stir in the chopped bell peppers and cook for another 3 minutes until they begin to soften.
  4. Add the spice mix and broth:
    • Sprinkle the pepper soup spice mix over the contents of the pot and stir well. Pour in the broth, add the scotch bonnet or habanero pepper for heat (if using), and bring to a boil.
  5. Simmer the soup:
    • Reduce the heat to low and let the soup simmer for 20-30 minutes until the meat is cooked through and the flavors meld together. If using fish, simmer for 10-15 minutes.
  6. Season and garnish:
