Pennsyltucky Pepper Stew

Pennsyltucky Pepper Stew is a hearty and flavorful dish that perfectly embodies the rich culinary traditions of the Pennsylvania-Kentucky region. This stew combines a variety of bell peppers, onions, and tomatoes with savory sausage, creating a vibrant and comforting meal that’s perfect for chilly evenings. The peppers add a sweet and slightly tangy flavor, while the sausage brings a satisfying, meaty richness to the stew. This dish is not only delicious but also versatile, as it can be served over rice, potatoes, or enjoyed on its own with a slice of crusty bread.

Ingredients:

  • 1 lb smoked sausage, sliced into 1/4-inch rounds
  • 1 large onion, chopped
  • 3 bell peppers (red, yellow, green), sliced into strips
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 tsp paprika
  • 1/2 tsp crushed red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, chopped for garnish

Instructions:

  1. Cook the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced sausage and cook until browned on both sides, about 5-7 minutes. Remove the sausage from the pot and set aside.
  2. Sauté the Vegetables: In the same pot, add the chopped onion and cook until it becomes translucent, about 3-4 minutes. Add the garlic and cook for another minute until fragrant.
  3. Add the Peppers: Stir in the bell peppers and cook for 5 minutes until they start to soften.
  4. Combine Ingredients: Return the sausage to the pot along with the diced tomatoes, chicken broth, paprika, and crushed red pepper flakes (if using). Stir everything together and bring to a simmer.
  5. Simmer: Reduce the heat to low, cover the pot, and let the stew simmer for 20-25 minutes, allowing the flavors to meld together.
  6. Season and Serve: Taste the stew and season with salt and pepper as needed. Garnish with chopped parsley before serving.

Enjoy your Pennsyltucky Pepper Stew with your favorite side or on its own as a hearty and satisfying meal.
