Ingredients:
- 3 cups rolled oats
- 1/2 cup creamy peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup coconut oil (or butter)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips (or regular chocolate chips)
- Optional: 1/4 cup chopped nuts, seeds, or dried fruit
Instructions:
- Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
- In a small saucepan over low heat, melt the peanut butter, honey (or maple syrup), and coconut oil until smooth and combined. Remove from heat and stir in the vanilla extract, cinnamon, and salt.
- In a large bowl, combine the oats (and any optional add-ins like nuts or seeds). Pour the peanut butter mixture over the oats and stir until everything is well coated.
- Spread the mixture evenly onto the prepared baking sheet. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crispy.
- Remove from the oven and allow the granola to cool completely. Once cool, stir in the chocolate chips.
