Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped peanuts (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. Mix the Wet Ingredients: In a large mixing bowl, combine the melted butter and peanut butter. Stir in the brown sugar and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  4. Add Mix-ins: If using, fold in the chocolate chips and chopped peanuts.
  5. Bake: Pour the batter into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Allow the blondies to cool in the pan for at least 20 minutes before lifting them out using the parchment paper overhang. Cut into squares and enjoy!

These blondies can be stored in an airtight container at room temperature for up to 3 days, or they can be frozen for longer storage.
