Peach Cake

Ingredients:

  • 1 1/2 cups all-purpose flour

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain yogurt
  • 3 large peaches, peeled, pitted, and sliced
  • 1 tablespoon brown sugar (optional, for sprinkling on top)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, beat the softened butter and granulated sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the sour cream or yogurt, beginning and ending with the dry ingredients. Mix until just combined.
  5. Pour the batter into the prepared cake pan and spread it evenly. Arrange the peach slices on top of the batter in a circular pattern, pressing them slightly into the batter.
