Pasta With Chickpeas

Pasta with chickpeas, also known as “pasta e ceci” in Italian, is a comforting and hearty dish that brings together the simplicity of pasta and the nourishing qualities of chickpeas. This meal is perfect for a cozy night when you want something filling yet simple to make. The creamy texture of the chickpeas, combined with garlic, tomatoes, and fragrant herbs, creates a wonderfully rich sauce that coats the pasta perfectly. Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 8 oz pasta (small shapes like ditalini, elbows, or shells work best)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried rosemary or thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups vegetable broth (or water)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions:

  1. Cook the Pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Sauté the Aromatics: In a large pan or pot, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  3. Add Tomatoes and Chickpeas: Add the diced tomatoes (with their juice), chickpeas, dried rosemary or thyme, and red pepper flakes (if using). Stir to combine and let it simmer for 5-7 minutes, allowing the flavors to meld.
  4. Simmer with Broth: Pour in the vegetable broth, season with salt and pepper, and bring the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes, allowing the sauce to thicken slightly.
  5. Combine Pasta and Sauce: Add the cooked pasta to the chickpea sauce and toss everything together to coat the pasta evenly. If the sauce is too thick, you can add a little more broth or water to loosen it up.
  6. Serve: Taste and adjust seasoning as needed. Garnish with freshly chopped parsley and, if desired, grated Parmesan cheese.
