Pasta Pomodoro is a simple yet elegant Italian dish that highlights the fresh flavors of tomatoes, basil, and garlic. This dish is light and quick to prepare, making it perfect for a weeknight meal or a casual dinner with friends. The sweetness of ripe tomatoes blends beautifully with fragrant garlic and fresh basil, all tossed with al dente pasta and finished with a sprinkling of Parmesan cheese. It’s a delightful celebration of quality ingredients and simplicity, giving you a comforting and satisfying meal in under 30 minutes.
Ingredients:
- 12 oz spaghetti or pasta of choice
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 small yellow onion, finely chopped
- 1.5 lbs fresh tomatoes, diced (Roma or plum tomatoes are best)
- 1/4 cup fresh basil leaves, torn
- Salt and pepper, to taste
- Pinch of red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese, for serving
Instructions:
- Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta.
- Prepare the sauce: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for 1 more minute until fragrant.
- Add the tomatoes: Stir in the diced tomatoes and cook for 10-12 minutes, stirring occasionally, until the tomatoes break down and form a sauce. If the sauce becomes too thick, add a splash of the reserved pasta water.
- Season: Season the sauce with salt, pepper, and red pepper flakes (if using). Add the fresh basil leaves and stir to combine.
- Combine: Add the cooked pasta to the sauce and toss until evenly coated. If the sauce is too thick, add more reserved pasta water to loosen it up.
- Serve: Serve the Pasta Pomodoro topped with grated Parmesan cheese and an extra drizzle of olive oil if desired.
