Pasta Pomodoro

Pasta Pomodoro is a simple yet elegant Italian dish that highlights the fresh flavors of tomatoes, basil, and garlic. The sweetness of ripe tomatoes blends beautifully with fragrant garlic and fresh basil, all tossed with al dente pasta and finished with a sprinkling of Parmesan cheese. Ingredients:

  • 12 oz spaghetti or pasta of choice
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 small yellow onion, finely chopped
  • 1.5 lbs fresh tomatoes, diced (Roma or plum tomatoes are best)
  • 1/4 cup fresh basil leaves, torn
  • Salt and pepper, to taste
  • Pinch of red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese, for serving

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. Prepare the sauce: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for 1 more minute until fragrant.
  3. Add the tomatoes: Stir in the diced tomatoes and cook for 10-12 minutes, stirring occasionally, until the tomatoes break down and form a sauce. If the sauce becomes too thick, add a splash of the reserved pasta water.
  4. Season: Season the sauce with salt, pepper, and red pepper flakes (if using). Add the fresh basil leaves and stir to combine.
  5. Combine: Add the cooked pasta to the sauce and toss until evenly coated. If the sauce is too thick, add more reserved pasta water to loosen it up.
  6. Serve: Serve the Pasta Pomodoro topped with grated Parmesan cheese and an extra drizzle of olive oil if desired.
