  • 2 tablespoons olive oil, divided
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 cup long-grain white rice
  • 2 cups chicken or vegetable broth
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 cup fresh parsley, chopped
  • Lemon wedges, for serving

Instructions:

  1. Prepare the Shrimp:
    • In a bowl, toss the shrimp with 1 tablespoon of olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and freshly ground black pepper. Set aside to marinate while you prepare the rice.
  2. Cook the Rice:
    • In a medium saucepan, heat 1 tablespoon of olive oil over medium heat.
    • Add the finely chopped onion and diced red bell pepper. Sauté for 3-4 minutes, until the vegetables are softened.
    • Add the minced garlic, ground cumin, and turmeric. Cook for another minute until fragrant.
    • Stir in the rice and cook for 1-2 minutes to lightly toast the grains.
    • Add the chicken or vegetable broth and bring to a boil.
    • Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
    • Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
  3. Cook the Shrimp:
    • In a large skillet, heat the remaining 1 tablespoon of olive oil over medium-high heat.
    • Add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.
    • Remove from heat.
  4. Combine and Serve:
    • Gently stir the cooked shrimp into the prepared rice.
    • Garnish with fresh parsley and serve with lemon wedges on the side.
