Panko-Crusted Baked Haddock

Panko-Crusted Baked Haddock is a light and crispy seafood dish that delivers a perfect combination of flavors and textures. The flaky haddock is coated in a golden, crunchy panko crust, seasoned with herbs, garlic, and a touch of lemon zest to enhance the freshness of the fish. Baked to perfection, this dish is not only delicious but also a healthier alternative to frying. It pairs wonderfully with a side of roasted vegetables or a fresh green salad, making it an ideal choice for a quick weeknight meal or an elegant dinner.

Ingredients:

  • 4 haddock fillets
  • 1 cup panko breadcrumbs
  • 2 tbsp melted butter
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried parsley
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the panko breadcrumbs, melted butter, garlic powder, dried parsley, and lemon zest. Stir until the panko is evenly coated.
  3. Pat the haddock fillets dry with paper towels, then season both sides with salt and pepper.
  4. Brush the top of each fillet with olive oil, then press the panko mixture onto the fish to create an even, firm coating.
  5. Place the fillets on the prepared baking sheet and bake for 12-15 minutes, or until the haddock is opaque and flakes easily with a fork, and the crust is golden brown.
  6. Serve the panko-crusted haddock with lemon wedges on the side and enjoy!
