Pan-Fried Whole Trout

Ingredients:

  • 2 whole trout, cleaned and gutted (about 1 pound each)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 lemon, thinly sliced
  • Fresh herbs (such as parsley, thyme, or dill)
  • Lemon wedges, for serving

Instructions:

  1. Prepare the Trout: Rinse the trout under cold water and pat them dry with paper towels. Season the inside and outside of the trout with salt and freshly ground black pepper. Stuff the cavity of each fish with a few lemon slices and a sprig or two of fresh herbs.
  2. Heat the Pan: In a large skillet, heat the olive oil over medium heat. Add the butter and allow it to melt, swirling the pan to combine the butter and oil.
  3. Cook the Trout: Place the trout in the skillet, making sure not to overcrowd the pan. If your skillet is not large enough to accommodate both fish, cook them one at a time. Cook the trout for about 4-5 minutes on each side, or until the skin is golden brown and crispy. The flesh should be opaque and flake easily with a fork.
  4. Add Garlic: In the last minute of cooking, add the minced garlic to the pan. Spoon the garlic butter mixture over the trout as it finishes cooking to infuse the fish with a rich, garlicky flavor.
  5. Serve: Carefully remove the trout from the pan and transfer them to a serving platter. Garnish with additional fresh herbs and lemon wedges. Serve immediately, with your choice of sides.
