Orange Pikelets

Ingredients:

  • 1 cup self-raising flour
  • 2 tablespoons sugar
  • 1 large egg
  • ½ cup milk
  • ¼ cup fresh orange juice
  • Zest of 1 orange
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, melted (plus more for cooking)
  • Pinch of salt

Instructions:

  1. In a medium mixing bowl, whisk together the self-raising flour, sugar, and a pinch of salt.
  2. In a separate bowl, combine the egg, milk, orange juice, orange zest, vanilla extract, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. The batter should be slightly thick but still pourable. Avoid overmixing.
  4. Heat a non-stick pan or griddle over medium heat and lightly grease it with butter.
  5. Drop tablespoons of batter onto the hot pan to form small pikelets. Cook for about 1–2 minutes, or until bubbles form on the surface and the edges look set.
  6. Flip and cook the other side for an additional minute or until golden brown and cooked through.
  7. Remove from the pan and keep warm while you cook the remaining batter.
