Ingredients:

For the Cake:

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract

For the Frosting:

  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons heavy cream (optional, for desired consistency)

Garnish:

  • Fresh orange slices or additional orange zest

Instructions:

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
    • In a large mixing bowl, sift together the flour, baking powder, and salt. Set aside.
    • In a separate bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes. Add the eggs one at a time, beating well after each addition.
    • Add the orange zest, orange juice, and vanilla extract, mixing until combined.
    • Gradually add the dry ingredients to the wet mixture, mixing until smooth and well combined.
    • Divide the batter evenly between the prepared pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  2. Make the Frosting:
    • In a large bowl, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on low speed until combined.
    • Add the orange juice, orange zest, and vanilla extract, beating until the frosting is smooth and creamy. If the frosting is too thick, add heavy cream, 1 tablespoon at a time, until you reach the desired consistency.
  3. Assemble the Cake:
    • Place one cake layer on a serving plate and spread a generous amount of frosting on top. Place the second cake layer on top and frost the top and sides of the cake.
    • Garnish with fresh orange slices or a sprinkle of orange zest for a vibrant finish.
  4. Serve:
    • Slice and enjoy your Orange Dream Cake! Store any leftovers in an airtight container at room temperature for up to 3 days.

This cake is best served chilled for a refreshing treat, or at room temperature for a softer texture. Enjoy!
