One-Pan Sweet Chili Shrimp and Veggies Peanut Chicken

Ingredients

For the Peanut Chicken:

  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces

  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon lime juice
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic

Vegetables:

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sugar snap peas
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the Sweet Chili Shrimp:
    • In a bowl, combine the sweet chili sauce, soy sauce, olive oil, and minced garlic.
    • Add the shrimp and toss to coat. Set aside to marinate while preparing other ingredients.
  2. Prepare the Peanut Chicken:
    • In another bowl, whisk together peanut butter, soy sauce, honey, lime juice, minced ginger, and minced garlic until smooth.
    • Add the chicken pieces and toss to coat evenly. Set aside.
  3. Cook the Vegetables:
    • In a large skillet or frying pan, heat olive oil over medium-high heat.
    • Add the sliced bell peppers, broccoli florets, and sugar snap peas.
    • Season with salt and pepper, and sauté for about 5 minutes, or until the vegetables are tender-crisp.
  4. Cook the Chicken and Shrimp:
    • Push the vegetables to one side of the pan and add the chicken with its marinade to the other side.

    • Move the chicken to one side and add the shrimp with its marinade to the empty side of the pan.
    • Cook the shrimp for about 3-4 minutes, or until pink and cooked through.
