Omurice is a popular Japanese comfort dish that combines two beloved foods: fried rice and an omelette. The name “omurice” is a blend of the words “omelette” and “rice,” perfectly capturing the essence of this delicious meal. Typically, the fried rice is seasoned with ketchup and mixed with chicken, vegetables, and sometimes ham or bacon. The rice is then wrapped in a fluffy omelette and drizzled with more ketchup or a savory sauce. Ingredients:

For the Fried Rice:

  • 1 tbsp vegetable oil
  • 1/2 onion, finely chopped
  • 1 small carrot, finely chopped
  • 1/2 cup cooked chicken breast, diced (or ham/bacon)
  • 1/2 cup frozen peas (optional)
  • 2 cups cooked white rice (preferably chilled)
  • 2-3 tbsp ketchup
  • 1 tbsp soy sauce
  • Salt and pepper, to taste

For the Omelette:

  • 4 large eggs
  • 2 tbsp milk
  • Salt and pepper, to taste
  • 1 tbsp butter

For Garnish:

  • Ketchup or tonkatsu sauce (Japanese Worcestershire sauce)
  • Fresh parsley or chopped green onions (optional)

Instructions:

  1. Make the Fried Rice:
    • In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and carrot, and sauté until they start to soften, about 3-4 minutes.
    • Add the diced chicken (or ham/bacon) and cook for another 2-3 minutes until heated through. Stir in the frozen peas, if using.
    • Add the cooked rice to the skillet and stir well to combine. Cook for 2-3 minutes until the rice is heated through.
    • Stir in the ketchup and soy sauce, mixing thoroughly until the rice is evenly coated. Season with salt and pepper to taste. Remove the fried rice from the skillet and set it aside.
  2. Make the Omelette:
    • In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
    • Heat the butter in a non-stick skillet over medium heat. Once the butter is melted and bubbling, pour in half of the egg mixture.
    • Tilt the skillet to spread the eggs evenly. As the eggs begin to set, gently lift the edges with a spatula and allow the uncooked eggs to flow underneath. Cook until the omelette is just set but still slightly runny on top.
  3. Assemble the Omurice:
    • Spoon half of the fried rice onto one side of the omelette in the skillet. Carefully fold the other side of the omelette over the rice to cover it.
    • Slide the omurice onto a plate, seam side down, and shape it into a neat oval if desired. Repeat with the remaining egg mixture and fried rice.
  4. Garnish and Serve:
    • Drizzle ketchup or tonkatsu sauce over the top of the omurice. Garnish with fresh parsley or chopped green onions if desired. Serve immediately.
