  • 1 1/2 cups boiling water
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1/4 cup warm water (110°F)
  • 2 tablespoons honey
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 3 1/2 to 4 cups all-purpose flour
  • 1 cup chopped nuts (such as walnuts, pecans, or almonds)
  • 1 egg, beaten (for egg wash)
  • Additional oats and nuts for topping (optional)

Instructions:

  1. Prepare the Oats:
    • Place the rolled oats in a large mixing bowl. Pour the boiling water over the oats and let them sit for 10-15 minutes, until softened and cooled to lukewarm.
  2. Activate the Yeast:
    • In a small bowl, dissolve the yeast in the warm water. Let it sit for 5-10 minutes, until foamy and active.
  3. Make the Dough:
    • Add the honey, melted butter, and salt to the oats, stirring to combine.
    • Stir in the activated yeast mixture.
    • Gradually add the flour, one cup at a time, until a soft dough forms. The dough should be slightly sticky but manageable.
  4. Knead the Dough:
    • Turn the dough out onto a floured surface and knead for about 8-10 minutes, until smooth and elastic. If the dough is too sticky, add a little more flour as needed.
    • During the last few minutes of kneading, incorporate the chopped nuts into the dough.
  5. First Rise:
    • Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
  6. Shape the Loaf:

  9. Bake the Bread:

  10. Cool and Serve:
    • Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
