Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup honey
  • 1/4 cup unsalted butter
  • 2 cups old-fashioned oats
  • 1 cup crispy rice cereal
  • 1/2 cup mini chocolate chips
  • 1/2 cup mini M&M candies
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. Prepare the Pan: Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. Melt the Mixture: In a medium saucepan, combine the peanut butter, honey, and butter. Heat over medium-low heat, stirring constantly, until the mixture is smooth and fully melted. Remove from heat and stir in the vanilla extract and a pinch of salt.
  3. Mix the Dry Ingredients: In a large bowl, combine the oats and crispy rice cereal. Pour the melted peanut butter mixture over the oats and cereal, stirring until everything is evenly coated.
  4. Add the Goodies: Allow the mixture to cool slightly, then fold in the mini chocolate chips and mini M&M candies. Mix until they are evenly distributed.
  5. Press into Pan: Transfer the mixture to the prepared baking dish. Use a spatula or the back of a spoon to press it firmly and evenly into the pan.
  6. Chill: Place the pan in the refrigerator for at least 2 hours, or until the bars are set and firm.
  7. Serve: Once set, use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve. Store any leftovers in an airtight container in the refrigerator.
