Ingredients:

  • For the nacho triangles:
    • 1 pound ground beef
    • 1 packet taco seasoning mix
    • 1/4 cup water
    • 1 cup black beans, drained and rinsed
    • 2 cups shredded Mexican blend cheese
    • 8 large flour tortillas
    • 1 tablespoon olive oil
    • Salt and pepper to taste
  • For the salsa-ranch dipping sauce:
    • 1/2 cup ranch dressing
    • 1/2 cup salsa
    • 1 tablespoon lime juice
    • 1 tablespoon chopped fresh cilantro (optional)

Instructions:

  1. Prepare the ground beef:
    • In a large skillet over medium-high heat, cook the ground beef until browned and cooked through, about 5-7 minutes. Drain any excess fat.
    • Add the taco seasoning mix and 1/4 cup of water to the beef. Stir to combine and cook for another 2-3 minutes until the sauce has thickened. Remove from heat and set aside.
  2. Assemble the nacho triangles:
    • Preheat your oven to 375°F (190°C).
    • Lay 4 of the flour tortillas flat on a baking sheet.
    • Evenly distribute the seasoned ground beef over the tortillas, spreading it out to cover the entire surface.
    • Sprinkle the black beans and shredded cheese evenly over the beef.
    • Place the remaining 4 tortillas on top, pressing down lightly to seal.
    • Brush the tops of the tortillas with olive oil and sprinkle with a little salt and pepper.
  3. Bake the nacho triangles:
    • Using a sharp knife or a pizza cutter, cut each tortilla stack into 6 triangles.
    • Arrange the triangles on the baking sheet, making sure they are not overlapping.
    • Bake in the preheated oven for 12-15 minutes, or until the tortillas are crispy and the cheese is melted and bubbly.
  4. Prepare the salsa-ranch dipping sauce:
    • In a medium bowl, mix together the ranch dressing, salsa, lime juice, and chopped cilantro (if using) until well combined.
    • Transfer to a serving bowl.
  5. Serve and enjoy:
    • Remove the nacho triangles from the oven and let them cool slightly.
    • Serve the nacho triangles warm with the salsa-ranch dipping sauce on the side.
