Ingredients:

  • 1 sheet puff pastry, thawed
  • 2 cups mushrooms, sliced (cremini, button, or your choice)
  • 1 cup smoked Gouda, shredded
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp fresh thyme or 1 tsp dried thyme
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Sauté the mushrooms: In a large skillet, heat the olive oil and butter over medium heat. Add the onions and cook until softened, about 3-4 minutes. Add the garlic and mushrooms, and sauté until the mushrooms release their moisture and become golden brown, about 5-7 minutes. Stir in the thyme, salt, and pepper. Remove from heat and let cool slightly.
  3. Prepare the puff pastry: Roll out the thawed puff pastry sheet on a lightly floured surface. Transfer the pastry to the prepared baking sheet.
  4. Assemble the filling: Spread the mushroom mixture evenly over one half of the puff pastry, leaving a small border around the edges. Sprinkle the shredded smoked Gouda over the mushroom mixture.
  5. Fold and seal: Fold the puff pastry over the filling to form a rectangle or square. Press the edges together with a fork to seal. Brush the top with the beaten egg for a golden finish.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
  7. Serve: Let the Mushroom and Smoked Gouda Puff cool slightly before slicing. Garnish with fresh parsley if desired and serve warm.

This Mushroom and Smoked Gouda Puff is a rich, savory delight that combines the earthy flavors of mushrooms with the smoky creaminess of Gouda, all wrapped in flaky puff pastry for an unforgettable dish!
