Ingredients

  • 1 1/4 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup honey or maple syrup
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 cups grated carrots
  • 1 apple, peeled and grated
  • 1/2 cup raisins
  • 1/2 cup shredded coconut
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup sunflower seeds (optional)
  • 3 large eggs
  • 2/3 cup vegetable oil or melted coconut oil
  • 1/4 cup orange juice
  • 2 tsp vanilla extract

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.
  2. Mix the dry ingredients: In a large bowl, whisk together the whole wheat flour, all-purpose flour, sugar, cinnamon, baking soda, baking powder, and salt.
  3. Add the mix-ins: Stir in the grated carrots, grated apple, raisins, shredded coconut, chopped nuts, and sunflower seeds (if using).
  4. Mix the wet ingredients: In a separate bowl, whisk together the eggs, vegetable oil, orange juice, honey or maple syrup, and vanilla extract.
  5. Combine wet and dry: Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  6. Fill the muffin tin: Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
