Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/4 cup sour cream or heavy cream
  • Salt and black pepper to taste
  • 1 tablespoon chopped fresh chives or parsley (optional)

Instructions

  1. Steam the Cauliflower: Fill a large pot with about an inch of water and place a steamer basket inside. Bring the water to a boil over medium-high heat. Add the cauliflower florets to the steamer basket, cover the pot, and steam for about 10-15 minutes, or until the cauliflower is very tender.
  2. Sauté the Garlic: While the cauliflower is steaming, melt the butter in a small skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Mash the Cauliflower: Once the cauliflower is tender, transfer it to a large bowl or food processor. Add the sautéed garlic and butter, Parmesan cheese (if using), sour cream or heavy cream, salt, and black pepper.
  4. Blend Until Smooth: Using a hand masher or immersion blender, mash the cauliflower until smooth and creamy. Alternatively, pulse in a food processor until the desired consistency is reached.
  5. Adjust Seasoning: Taste the mashed cauliflower and adjust the seasoning with more salt and pepper if needed.
  6. Garnish and Serve: Transfer the mashed cauliflower to a serving bowl and garnish with chopped chives or parsley, if desired. Serve warm as a side dish.

Mashed Cauliflower is a versatile and flavorful addition to any meal, providing a nutritious and delicious alternative to mashed potatoes that everyone can enjoy.
