Magaricz

Magaricz is a hearty and comforting dish, deeply rooted in Eastern European culinary traditions. It’s a rich, slow-cooked stew made with a variety of meats, grains, and vegetables, often enjoyed during the colder months. The flavors meld together beautifully as the stew simmers, creating a meal that’s both filling and full of depth. Traditionally, Magaricz is made in large batches to serve family and friends, making it perfect for gatherings or special occasions. Ingredients:

  • 1 lb beef stew meat, cut into cubes
  • 1 lb pork shoulder, cut into cubes
  • 1 cup barley or buckwheat
  • 2 large onions, diced
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 1 cup cabbage, shredded
  • 4 cups beef or vegetable broth
  • 2 bay leaves
  • 1 tsp caraway seeds
  • Salt and pepper to taste
  • 2 tbsp vegetable oil
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Brown the Meat: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the beef and pork, cooking until browned on all sides. Remove the meat from the pot and set aside.
  2. Sauté the Aromatics: In the same pot, add the diced onions and garlic. Sauté until the onions are translucent and fragrant, about 5 minutes.
  3. Add Vegetables and Spices: Return the browned meat to the pot. Add the carrots, potatoes, cabbage, bay leaves, and caraway seeds. Stir to combine.
  4. Add Grains and Broth: Pour in the barley or buckwheat, followed by the broth. Stir well, ensuring all ingredients are evenly distributed.
  5. Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 1.5 to 2 hours, or until the meat is tender and the grains are fully cooked.
  6. Season and Serve: Remove the bay leaves and season the stew with salt and pepper to taste. Serve hot, garnished with fresh parsley.
