Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup tahini
  • 1/4 cup fresh cilantro leaves, packed
  • 1 small jalapeño, seeded and chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 2–3 tablespoons water, as needed
  • Lime zest and cilantro leaves for garnish

Instructions

  1. Prepare the Chickpeas: In a food processor, combine the drained chickpeas, lime juice, tahini, cilantro, jalapeño, and garlic. Pulse until the mixture is coarsely chopped.
  2. Blend the Hummus: Add olive oil, cumin, and salt to the food processor. Blend the ingredients until smooth and creamy. If the hummus is too thick, add water, one tablespoon at a time, until the desired consistency is reached.
  3. Taste and Adjust: Taste the hummus and adjust the seasoning, adding more salt or lime juice if desired.
  4. Serve: Transfer the hummus to a serving bowl. Garnish with lime zest and additional cilantro leaves.
  5. Enjoy: Serve with pita chips, fresh vegetables, or as a spread on sandwiches or wraps.

This Lime Cilantro Hummus can be stored in an airtight container in the refrigerator for up to 5 days. Enjoy the bright and tangy flavors as a delightful addition to your meals!
