Lime Angel Food Cake

Lime Angel Food Cake

Ingredients:

  • 1 cup cake flour
  • 1 ½ cups granulated sugar, divided
  • 12 large egg whites, room temperature
  • 1 ½ teaspoons cream of tartar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • Zest of 2 limes
  • 2 tablespoons lime juice
  • Powdered sugar, for dusting (optional)
  • Lime slices or zest, for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Have an ungreased angel food cake pan ready.
  2. In a small bowl, sift together the cake flour and ¾ cup of the sugar. Set aside.
  3. In a large mixing bowl, beat the egg whites, cream of tartar, and salt on medium speed until soft peaks form.
  4. Gradually add the remaining ¾ cup of sugar, 1 tablespoon at a time, beating until stiff peaks form.
  5. Gently fold in the vanilla extract, lime zest, and lime juice, being careful not to deflate the egg whites.
  6. Gradually fold the flour mixture into the egg whites in small batches, making sure to keep the batter light and airy.
  7. Pour the batter into the ungreased angel food cake pan and smooth the top with a spatula. Bake for 35-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  8. Invert the pan onto a cooling rack and let the cake cool completely.
  9. Once cooled, carefully run a knife around the edges to release the cake from the pan.
  10. Dust with powdered sugar and garnish with lime slices or extra zest, if desired.
