Ingredients:

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil or butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • Zest of 1 lemon
  • Juice of 1 lemon (about 3 tablespoons)
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Sauté the Aromatics:
    • In a medium saucepan, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  2. Toast the Rice:
    • Add the rice to the saucepan and stir to coat the grains in the oil and onion mixture. Cook for 2-3 minutes, stirring occasionally, until the rice is lightly toasted.
  3. Add the Liquid and Lemon:
    • Pour in the chicken or vegetable broth, lemon zest, lemon juice, and thyme. Stir to combine. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is tender and the liquid is absorbed.
  4. Fluff and Serve:
    • Remove the saucepan from the heat and let the rice sit, covered, for 5 minutes. Fluff the rice with a fork and season with salt and freshly ground black pepper to taste.
  5. Garnish:
    • Garnish with fresh parsley if desired, and serve hot.

Lemon Rice Pilaf is a simple yet flavorful side dish that brings a refreshing citrus note to your meal. Its light, fluffy texture and vibrant lemon flavor make it a perfect complement to a variety of dishes, adding both color and taste to your table.
