Ingredients:

  • 1 lb pork tenderloin, sliced into 1-inch medallions

  • ¼ cup chicken broth
  • 2 tbsp fresh lemon juice
  • 2 tbsp capers, drained and rinsed
  • 1 tsp lemon zest
  • Fresh parsley for garnish
