Layered Picnic Loaves are a delightful and visually impressive way to enjoy a meal outdoors or at any gathering. These loaves are packed with layers of flavor, from savory meats and cheeses to fresh vegetables, all neatly arranged inside a crusty loaf of bread. The beauty of this dish lies in its versatility; you can customize the fillings to suit your taste or what you have on hand. Once assembled, the loaf is pressed, allowing all the flavors to meld together, making it easy to slice and serve at your picnic or party. It’s a perfect make-ahead dish that’s as practical as it is delicious.
Ingredients:
- 1 large round loaf of crusty bread (like a boule or sourdough)
- 4 tablespoons pesto or your favorite spread (like tapenade or hummus)
- 4 ounces thinly sliced deli meats (such as ham, turkey, or salami)
- 4 ounces sliced cheese (such as provolone, mozzarella, or cheddar)
- 1 roasted red pepper, sliced
- 1 small cucumber, thinly sliced
- 1 small red onion, thinly sliced
- A handful of fresh spinach or arugula
- Salt and pepper to taste
- Olive oil for brushing
Instructions:
- Prepare the Bread: Slice the top third off the loaf of bread and set it aside. Hollow out the bottom part of the loaf, leaving about an inch of bread around the edges and at the bottom. Be careful not to tear the bread.
- Layer the Ingredients: Spread half of the pesto or chosen spread on the inside of the hollowed-out loaf. Begin layering the ingredients, starting with a layer of deli meats, followed by a layer of cheese, then roasted red peppers, cucumber slices, red onion, and spinach or arugula. Season each layer lightly with salt and pepper as you go. Repeat the layers until all ingredients are used, finishing with a final spread of pesto or chosen spread on the top layer.
- Close the Loaf: Place the top of the loaf back on and press down firmly. Wrap the entire loaf tightly in plastic wrap.
- Press the Loaf: Place the wrapped loaf in the refrigerator and press it with a heavy object, such as a cast iron skillet or a stack of books, for at least 2 hours or overnight. This helps the flavors meld and makes the loaf easier to slice.
- Serve: When ready to serve, unwrap the loaf and slice it into wedges or thick slices. Enjoy your Layered Picnic Loaf at room temperature, perfect for an outdoor feast or casual gathering!
