  • 1 lb ground beef

  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • Salt and pepper, to taste
  • 1 can (10 oz) diced tomatoes with green chilies, drained
  • 1/2 cup sour cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup fresh cilantro, chopped (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish.
  2. Cook the beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up as it cooks. Drain excess fat if necessary.
